Organic Cinnamon Bark Chips
Cinnamon has been used in traditional medicine for centuries. In Ayurveda, it is used to help diabetics control their blood sugar levels. In traditional Chinese medicine, cinnamon is used for colds, flatulence, nausea, diarrhea, and painful menstrual periods. It’s also believed to improve energy, vitality, and circulation and is particularly useful for people who tend to feel hot in their upper body but have cold feet.
Recipe Idea:
Pair with your favorite fruit or ginger for a sweet and spicy KT.

Cinnamon chips are a must have in your flavor arsenal. I love these! So great with any fruit…try fresh pear and cinnamon chips! Yum! They are more powerful for flavoring than cinnamon stick which I beat with a hammer and then put in bottles which was also stringy! Not so fun!

These chips work perfectly. It is easy to add just the right amount (unlike cinnamon sticks) and easy to filter out of the second ferment before bottling (unlike cinnamon powder.)
A 1/2 tsp will give a definite, but not overpowering, flavor to a 2-quart (1/2 gallon) second ferment.
My favorite recipe with cinnomon chips is:
~1/2 tsp Cinnamon chips
~1/2 inch of vanilla bean
~1/2 inch cube of fresh ginger
~fruit or rhubarb
In a 2-quart jar, for a 2-day second ferment. It tastes just like pie.

I really like the soft, sweetness that the cinnamon chips add to KT. It has almost a christmas-y taste that is similar to a good cider.
